Vinification: The vinification of “Rosato San Lorenzo” foresees a particular maceration of the grapes at low temperature (8°C for 10 hour). Afterwards, the grapes are soft pressed and yielding a “mosto fiore" or free-run must, which is fermented in stainless steel tank under controlled temperature in order to accentuate the wine’s bouquet.
